Energy In terms of energy in the Manchester hotel, we have four huge heat pumps on the roof and some electrical boilers in backup, and we electrified the kitchen.
Food and beverage made up a huge percentage of the emissions for the Manchester site before the renovation.
Now, we work with Klimato, a start-up from Sweden, to fine-tune and curate our food choices so that they are low carbon – not by turning everything vegetarian but by labelling. Klimato has the biggest database of food related emissions, which is also regionalised. We know if you go to a plant-based diet, you’ re going to save massive amounts of carbon. But actually if you switch one fish for another, for example, or beef to chicken, it can have a massive impact.
You keep the dish but you turn it into something low carbon – but you have to meet consumers where they are.
On top of the choice of the menu, we’ re also directing the choices of a guest through visual clues or the way we price things – but it’ s their choice.
Waste When it comes to waste, we work with a food management tool called eSmiley that is weighing, analysing and optimising buffets alongside helping chefs manage food waste. We also work with Too Good to Go.
We’ ve also worked on digitising the hotel. So you find almost no collateral, no paper, everything is digitised.
We took out the dry amenities in the room, which is a big change from our regular brand set up. We’ ve taken it away and put it on the app so people can order it, but you need to go to the app.
We also looked at where the waste treatment partners sit. They work a lot with local partners, so it’ s never very far away. So we optimise the whole waste collection. We have in room recycling, and for the bulk amenity bottles we partner with Clean World. They are reused for the staff canteen and hand washed in the back of house. Then it’ s sent to their sorting and recycling centre, so that also is fully recycled. We get all the data from that on how much carbon is saved.
